Oatmeal Chocolate Chip Cookies

I absolutely love to bake! This cookie recipe is my go-to when I’m craving something carb-y and a little sweet. It makes 12 cookies, just enough to enjoy a few, share a few and freeze a few.
Ingredients:
- 1/2 cup oatmeal
- 1/2 tsp of baking soda
- 1/4 cup of dark (dairy free) chocolate chips (or you can also sub with raisins!)
- 1/4 cup of coconut sugar
- 3/4 cup of oat powder (ground oatmeal in food processor)
- 1/4 tsp of salt
- 1/2 tsp of vanilla extract
- 1/4 cup of softened coconut oil
- Handful shredded coconut (optional)
- 1 tbsp flaxseed meal
- 3 tbsp warm water
Directions:
- Preheat oven to 350 degrees
- Line baking sheet with parchment paper
- Whisk together flaxseed meal and water
- Mix together oat flour, oatmeal, shredded coconut, baking soda and salt
- Mix together flax, coconut oil, vanilla and coconut sugar
- Mix together dry and wet ingredients
- Fold in chocolate chips
- Scoop about 12, 1 tbsp size balls onto baking sheet and slightly flatten each
- Bake for 10 minutes until golden around edges
- Let cool on pan and then move to a cooling rack
- Enjoy!
