White Bean Summer Salad

For lunches during the week, I love a quick salad. I like this one because I can make the bean mixture once and then use it to top on greens a few times. I will also add leftover protein as I have it. Usually that is a side of salmon or chicken! 

Ingredients:

  • 1 can white beans drained and rinsed
  • 1/4 cup diced cherry tomatoes
  • 1/4 cup diced cucumbers
  • 1/4 of a diced red onion (optional- I’m not a big raw onion gal!)
  • 1/2 squeeze of lemon
  • 1/4 tsp chopped garlic
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh cilantro 
  • 1 tbsp chopped fresh parsley
  • Salt & Pepper to taste
  •  

Directions: Mix all ingredients together in a bowl and top over greens of your choice! I like spinach or arugula. Save the rest in the fridge! I like to enjoy it gold and find that the flavors get even more rich the longer it sits. If you have any avocado on hand, I bet that would be good on top too.
